Zesty Fish Tostadas

Serves: 6 Tostadas
Ingredients
- 3 fresh cod filets
- 6 flat tostada shells
- 1 can black beans rinsed
- 1 can vegetarian refried beans
- 1 cup shredded green cabbage
- 3 tbs fresh lime juice
- 1 tbs fresh chopped cilantro
- 1 bell pepper (any color) chopped
- ¼ cup grated jack cheese
- ¼ cup salsa of choice
- 3 tbs olive oil
- Kosher Salt
- Pepper
- Smoked paprika
Instructions
- In a small bowl, combine cabbage, lime juice, 1 tbs olive oil, cilantro, salt and pepper.
- Set aside. Sprinkle cod filets with salt, pepper and paprika.
- Cook on medium heat for 3 minutes on each side in a grill pan lightly coated with 1 tbs olive oil on the stove.
- Cut each filet in half and set aside.
- Heat refried beans and black beans in two small pots.
- Sauté bell peppers and 1 tbs olive oil.
- Assemble tostadas as follows: Spread 1 tbs refried beans evenly onto each flat tostada shell.
- Sprinkle bell peppers over refried beans.
- Add 2 tbs cabbage mixture over peppers.
- Sprinkle 1 tbs black beans over cabbage.
- Sprinkle 1tbs grated cheese over beans.
- Place one piece of fish over top of tostada and serve with salsa of choice.
