Weeknight Dijon Chicken

Ingredients
- 2 tbsp Dijon mustard
- ¼ cup red wine vinegar
- 2 tbsp olive oil
- 1 tsp honey
- 1tsp onion powder
- 1 tsp dried oregano
- 1 clove minced garlic
- Pinch of salt
- Pinch of pepper
- 2 tbsp capers
- 2 large boneless skinless chicken breasts cut into chunks
- 2 cups small red potatoes cut into halves
- 1 large zucchini cut into thick coins
Instructions
- In a small bowl, whisk together mustard, vinegar, olive oil, honey, onion powder, oregano, garlic, salt and pepper until smooth.
- Add capers and set aside.
- Place chicken, potatoes and zucchini into a medium baking dish.
- Pour mustard mixture over the baking dish so that each piece of chicken, potato and zucchini is coated in marinade.
- Allow to marinate for 15 minutes.
- Preheat oven to 350 degrees F.
- Bake uncovered for one hour or until chicken is cooked and potatoes are tender.
- Serve immediately.
