Turmeric Cauliflower with Herb Yogurt Sauce

Ingredients
- 1 medium cauliflower, chopped into small pieces
- 4 tbsp EVOO
- 1 tbsp turmeric
- 8 oz full fat Greek yogurt
- 2 tbsp full fat sour cream
- Juice of one lemon
- 2 garlic cloves, minced
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh mint, finely chopped
- Salt and Pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- Toss cauliflower in 3 tbsp EVOO, turmeric, salt, and pepper, and roast for 45 minutes or until golden brown.
- While the cauliflower is in the oven, mix Greek yogurt, sour cream, lemon juice, 1 tbsp EVOO, garlic, dill, parsley, mint, salt and pepper. Chill the sauce until cauliflower is ready,
- Serve and enjoy!
