Tostones (Fried Plantains) with Mojo (Garlic Sauce)

Ingredients
- Tostones:
- 4 green plantains, peeled and sliced into 1-inch thick coins
- 2 cups vegetable oil
- Coarse kosher salt to taste
- Mojo Sauce:
- ½ cup fresh lemon juice
- ⅓ cup EVOO
- 1 small Spanish onion, finely chopped
- 2 heads of garlic, finely chopped
- 1 tsp oregano
- 1 tbsp Salt
Instructions
- In a large frying pan, fry plantains for two minutes on each side. Remove plantains from heat. They will not be completely cooked.
- If you have a Tostonera (plantain smasher), smash each plantain in the Tostonera and return to oil and fry for approximately two more minutes on each side. Note: If you do not have a Tostonera, you can smash the plantains between a folded paper brown lunch bag. This works just as well.
- Remove plantains and sprinkle with coarse kosher salt.
- Continue this process until you run out of plantains.
- For the Mojo, saute the onions in the EVOO until translucent. Add the garlic and cook for two to four minutes. Add lemon juice, oregano, and salt, and stir. Let the mojo simmer for about five minutes before removing from heat.
- Serve the Tostones with Mojo! Enjoy
