If you wait all year for the delicious taste of summer corn, you will love my summer sweet corn fritters with a kick. Each bite is bursting with succulent kernels and just the right amount of heat. Serve with salsa or guacamole.
Sweet Summer Corn Fritters With a Kick

Serves: 12 Fritters
Ingredients
- 2 ½ cups fresh roasted corn cut off the cobb
- 1 red bell pepper finely diced
- ¼ cup roasted diced hatch chiles (seeds and veins removed)
- 1 cup flour
- ⅔ cup buttermilk
- 2 eggs
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- ½ tsp sugar
- ½ tsp salt
- unsalted butter for pan
Instructions
- In a large mixing bowl, gently whisk together flour, buttermilk, eggs, spices and sugar until combined.
- Add corn, bell pepper and chilies.
- Heat a medium frying pan on medium heat and melt 1 tsp butter.
- Drop ¼ cup of batter onto hot frying pan and cook for about 3 minutes on each side until fritter becomes golden brown and fluffy.
- Repeat process until all batter is used.
