Ingredients
- 1 lb package of pasta
- ½ cup sun dried tomatoes soaked in olive oil
- ¼ cup capers (drained)
- 2 cloves garlic
- ½ cup red wine vinegar
- ¼ cup extra virgin olive oil
- 1 tbsp honey
- 1 tsp kosher salt
- 1 tsp pepper
- ½ cup freshly grated parmesan cheese
- 1 cup cherry tomatoes sliced in halves
- ¼ cup fresh parsley
- ¼ cup fresh basil
Instructions
- Cook pasta according to package directions.
- Drain pasta, place in large bowl, and set aside. In a food processor, combine sun dried tomatoes, capers, garlic, vinegar, olive oil, honey, salt and pepper until it becomes a smooth paste.
- Pour mixture over pasta and mix well until each piece is coated in sauce.
- Add cheese, tomatoes, parsley and basil.
- Toss together and chill for at least 30 minutes before serving.
