One of my favorite summer desserts is this Strawberry Maple Pie with Brown Sugar Whipped Cream. The sweet and slightly tart fresh strawberries marry perfectly with the unique flavor of the maple syrup, and the brown sugar whipped cream made from scratch will blow away anything from a can. Enjoy this summer delicacy while strawberries are still in season!
Strawberry Maple Pie with Brown Sugar Whipped Cream

Ingredients
- Pie crust:
- 3 cups all purpose flour
- 2 sticks unsalted butter, very cold
- 2 tbsp sugar
- 1 tsp salt
- ½ cup ice water
- 1 egg yolk
- 2 tbsp water, room temperature
- Filling:
- 2 lbs strawberries, stems removed and halved
- ⅔ cup maple syrup
- 1 tbsp vanilla extract
- 2 tbsp all purpose flour
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp unsalted butter, cut into small cubes
- Whipped cream:
- 1 cup heavy whipping cream
- 2 tbsp light brown sugar
- 1 tsp vanilla extract
Instructions
- In a stand mixer, mix flour, sugar, and salt. Add butter and mix until dough begins to looks crumbly. Slowly add ice water and shut off mixer when dough is barely combined. Try not to over mix.
- Turn dough out and form two equal sized balls. Wrap both in plastic wrap and chill for at least 30 minutes.
- In a large bowl, combine strawberries, maple syrup, vanilla extract, flour, lemon juice, and lemon zest. Set aside.
- Preheat oven to 375 F.
- Once the dough has chilled, roll one ball out on floured surface. The dough should look like a flat disk approximately ⅓ inch thick. Gently lift dough and gently press into pie dish. There is no need to grease the dish prior, as the butter in the dough will prevent the crust from sticking.
- Pour strawberry mixture on top of the dough. Sprinkle the two tablespoons of butter cubes over the mixture.
- Roll second ball of dough out on floured surface to the same thickness. Gently place the dough on top of the strawberry mixture and crimp edges with your fingers.
- Cut a small circle out of the center of the top crust.
- Combine egg yolk and 2 tbsp of water to create an egg wash. Brush egg wash over the top of the pie.
- Bake for approximately 45 minutes or until golden brown.
- While the pie is in the oven, combine heavy whipping cream, light brown sugar, and vanilla extract on high speed in stand mixer until it reaches your desired consistency.
- Serve pie with a dollop of the brown sugar whipped cream! Enjoy!
