My Splendid Spinach Surprise is a unique way to feature spinach, and when you slice into it there is an egg-cellent surprise waiting for you. I know that’s cheesy- but no, really, it is actually cheesy! This dish can be served cold or hot and you can use any cheese you like. Enjoy!
Splendid Spinach Surprise

Ingredients
- 28 oz frozen spinach, thawed and well drained
- 12 oz Colby jack cheese, shredded
- 5 eggs
- 1 cup bread crumbs
- ¼ cup fresh dill, chopped
- ¼ cup fresh parsley, chopped
- Salt and Pepper to taste
- 3 hard cooked eggs
Instructions
- Preheat oven to 375 degree F.
- In a large bowl, combine thawed spinach, ⅔ of the cheese, eggs, bread crumbs, dill, parsley, salt, and pepper. Mix until all ingredients are evenly combined.
- Line a loaf pan with parchment paper. Pour half of the spinach mixture into the loaf pan.
- Assemble the three hard cooked eggs in a line, evenly spacing them so they are horizontally oriented.
- Pour remaining mixture over the hard cooked eggs.
- Sprinkle top with remaining cheese and bake for 45 minutes.
- Serve and enjoy!
