Spicy Peanut Noodles

Ingredients
- 1 cup peanut butter
- 4 tbsp tahini
- ¼ cup rice wine vinegar
- ½ cup soy sauce, reduced sodium
- 1 tsp sesame oil
- 1 tbsp honey
- 1 1-inch piece of ginger, roughly chopped
- 5 garlic cloves, roughly chopped
- 1 tbsp sambal (or any other Asian chili paste you like)
- 2 carrots, grated
- 1 cup broccoli florets, blanched
- 1 small red bell pepper, chopped into 1-inch slices
- 2 green onions, thinly sliced for garnish
- 1 lb linguine
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Boil linguine in salted water with 2 tbsp of vegetable oil. Remove after about five minutes or until perfectly al dente.
- In a food processor, process peanut butter, tahini, rice wine vinegar, soy sauce, sesame oil, honey, ginger, garlic, and sambal until very smooth.
- Toss the linguine with the carrots, broccoli, bell pepper, and peanut sauce.
- Garnish with green onions. Either serve warm or chill for a more refreshing meal. Enjoy!
