Ingredients
- 2 tbsp EVOO
- 1 large onion, diced
- 3 carrots, diced
- 4 celery stalks, diced
- 2 cloves garlic
- ½ cup white wine
- 6 ounces orange lentils
- 1 14.5 oz can diced tomatoes, low sodium and drained
- 1 tsp coriander
- 2 tsp turmeric
- 2 tsp cumin
- 1 14.5 ounce can coconut milk
- 6 cups vegetable broth
- Salt and Pepper to taste
Instructions
- In a large pot, saute onions, carrots, and celery in EVOO for approximately five minutes over medium-high heat or until they begin to soften. Add garlic and saute for another two minutes.
- Add white wine and scrape any brown bits on bottom of pot. Reduce for three minutes.
- Add the lentils, diced tomatoes, coriander, turmeric, cumin, coconut milk, vegetable broth and a large pinch of salt and pepper.
- Let simmer over low heat for 45 minutes, stirring regularly.
- Garnish with parsley. Enjoy!
