My savory cheese and vegetable pastries are a perfect way to wow last-minute dinner guests or even add some class to a weeknight dinner without too much work. These pastries are light and elegant and can be served with green vegetables such as asparagus or even a mixed green salad with a mustard vinaigrette. Ingredients
- 1 package ( 2 sheets ) defrosted but cold puff pastry
- 1 yellow onion sliced thinly
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tbsp fresh thyme
- pinch of salt
- pinch of pepper
- ¼ cup white cooking wine
- ½ cup grated parmesan
- 1 log garlic and herb goat cheese
- 2 large sliced vine ripe tomatoes
- 1 package of sliced cremini mushrooms
Instructions
- Preheat oven to 450 degrees F.
- Begin by caramelizing onion over low heat with butter, olive oil thyme, salt and pepper for about ten minutes or until glossy and transparent looking.
- Add wine and continue cooking for another five minutes.
- Remove pan from heat.
- Using two-inch round cookie cutters, cut out about twenty round pieces of the puff pastry and place on a parchment-paper-lined baking pans (2) about an inch apart.
- Begin assembling tarts by placing a teaspoon of onions directly in center of each pasty.
- Then sprinkle about a teaspoon of parmesan on top of the onions.
- Next, either place a tomato or several sliced mushrooms on top.
- Finally, top with several crumbles of goat cheese.
- Remember to place all pastry fillings as close to center of pastry as possible, as it will allow for the uncovered edges to puff up in the oven.
- Bake pastries for about 12 minutes or until slightly golden and puffed up.
- Eat warm or at room temperature.
