I love this Roasted Delicious Delicate squash! To me, fall means taking advantage of all of the beautiful seasonal squash. Delicatas are exceptionally sweet and the fresh thyme and salt compliment the sweet flavor perfectly! Enjoy!

Ingredients
- 1 large delicata squash
- 2 tbsp EVOO
- 1 tsp course Kosher salt
- 1 tbsp fresh thyme leaves
Instructions
- Preheat oven to 400 degrees F.
- Slice delicata squash in half lengthwise and remove seeds.
- Slice the squash into 2-inch pieces and place on a baking sheet. Toss with EVOO, salt, and fresh thyme,
- Roast squash for 45 minutes, or until the squash begins to caramelize.
- Garnish with extra thyme sprigs. Enjoy!
