Ingredients
- 2 tbsp vegetable oil
- 1 tbsp toasted sesame oil
- 1 cup frozen peas and carrots mix
- 4 eggs whisked together
- ¾ cup pineapple chunks (fresh, canned or frozen)
- ¼ cup scallions, sliced
- 2 cups cooked brown rice
- ¼ cup soy sauce
Instructions
- Heat a large wok with vegetable oil and sesame oil on medium heat.
- Add frozen peas and carrots and continue to cook on medium heat for 1 minute.
- Use a spoon to move peas and carrots to one side of wok and add whisked eggs into wok opposite the peas and carrots.
- Use a spoon or spatula to scramble the eggs.
- Once the eggs are cooked well done, mix with peas and carrots.
- Add pineapple chunks, cooked rice, half of sliced scallions, and soy sauce.
- Mix well and continue to cook over low heat for about 4 minutes.
- Remove from heat once rice is completely hot and garnish with remaining scallions.
