Parmesan Crusted Tilapia

Ingredients
- 4 fresh tilapia filets
- ¼ cup light mayo
- ¼ cup Italian bread crumbs
- ¼ cup grated parmesan
- ¼ stick of cold butter
- 1 bunch fresh parsley chopped (use as little or as much as desired)
- pinch of salt
- pinch of pepper
Instructions
- Preheat over to 400 degrees F.
- Line a large baking pan with parchment.
- Wash tilapia filets and gently pat dry with paper towels, removing as much moisture as possible.
- Place filets on parchment and use a brush to lightly coat each filet with a thin layer of mayo.
- This will serve as glue for the crumb topping.
- In a separate bowl, combine bread crumbs, parmesan, butter, parsley, salt and pepper.
- Mix until the butter takes the shape of small peas or pebbles.
- Once combined, press the crumb topping on to the mayo surface of each filet.
- It will be slightly messy, but have no doubt, once it bakes, it is utter perfection.
- Once each filet has a ½ inch layer of topping pressed in to it, bake for about 20 minutes or until topping is crispy and golden brown. Enjoy.
