Not Your Average Wonton Soup

Ingredients
- Wontons:
- ½ lb lean ground kosher turkey
- ¼ cup thinly diced scallions
- 1 egg beaten
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp brown sugar
- 1 tbsp fresh grated ginger
- pinch kosher salt
- pinch ground black pepper
- 40 wonton wrappers
- small bowl of water to seal wantons
- Broth:
- 5 cups vegetable broth
- ¼ cup soy sauce
- 1 tbsp minched garlic
- 1 tbsp fresh grated ginger
- ¼ cup thinly diced scallions
- 2 tbsp brown sugar
- 3 cups Asian vegetables (snow peas, bell peppers, broccoli, bok choy..)
Instructions
- In a medium bowl, combine ground turkey with all ingredients up to black pepper.
- Fill each wonton wrapper with 1 teaspoon of meat mixture and seal the edges with water, creating a triangle-shaped dumpling.
- Then pull bottom two corners together and seal with water yielding wonton shape.
- Most wonton wrapper packages have a diagram explaining how to fold each wonton.
- Set wontons on a baking sheet once they are shaped and set aside.
- In a large soup pot, heat all broth ingredients except for vegetables and allow to boil for several minutes.
- Once broth is boiling consistently, gently drop each wonton in to the soup.
- When wontons are fully cooked, they will float to the surface of the pot.
- Once wontons are cooked (about ten minutes), add vegetables and serve immediately so that vegetables are still slightly crunchy.
