Not Your Mother's Mashed Potatoes

Ingredients
- 3 lbs Yukon Gold potatoes
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 2 tbsp butter, unsalted
- ½ cup sour cream
- ¼ cup cream cheese
- ½ cup jack cheese, grated
- ½ cup sharp white cheddar, grated
- Salt and Pepper to taste
- Fresh chives, chopped
Instructions
- Preheat oven to 425 degrees F.
- In a large pot, boil potatoes in water over high heat for 30 minutes or until soft.
- Drain potatoes and return to pot. Mash the potatoes with a potato masher.
- Mix in garlic cloves, garlic powder, butter, sour cream, cream cheese, jack cheese, cheddar cheese, and salt and pepper.
- Pour mashed potatoes into a baking dish and bake for 20 minutes or until golden brown.
- Garnish with chives and enjoy!
