Moroccan Carrot Salad

Ingredients
- 2 lbs carrots, peeled and parboiled
- 3 garlic cloves, minced
- Juice of 2 lemons
- Zest of one lemon
- 1 tbsp champagne vinegar
- ¼ cup EVOO
- 2 tbsp fresh mint, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp coarse kosher salt
- 1 tsp cracked pepper
Instructions
- In a large bowl, whisk together garlic, lemon juice, lemon zest, champagne vinegar, EVOO, mint, dill, cumin, cayenne pepper, kosher salt, and cracked pepper.
- Slice carrots into ½ “ coins and toss into the vinaigrette.
- Marinate in refrigerator for at least one hour. Enjoy!
