My Mediterranean Lentil Salad is high in fiber and protein and very refreshing on a warm summer day. May be used as a side dish or a meal on its own.
Mediterranean Lentil Salad

Ingredients
- 1 cup pre-cooked brown lentils
- ½ cup chopped Persian cucumbers
- ½ cup chopped red bell pepper
- ¼ cup finely chopped red onion
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
- 1 tbsp Dijon mustard
- ½ cup red wine vinegar
- ¼ cup extra virgin olive oil
- 1 tsp honey
- 1 tsp kosher salt
- ½ tsp ground pepper
- ½ tsp onion powder
- ¼ cup crumbled feta cheese
Instructions
- In a medium bowl, combine lentils, cucumbers, bell pepper, onion, dill, and parsley.
- Set aside. In a small bowl, whisk together mustard, vinegar, olive oil, honey, salt, pepper, and onion powder until it forms a smooth vinaigrette.
- Pour over lentil mixture and use a spoon to gently mix until well combined.
- Spoon crumbled feta over the top of salad and enjoy immediately or chill and serve up to 48 hours later.
