Marinated Cauliflower Salad

Ingredients
- ½ large head of raw cauliflower, chopped into one-inch pieces
- ½ cup white vinegar
- ¼ cup EVOO
- 3 tbsp white sugar
- 2 tsp coarse Kosher salt
- 1 tsp cracked pepper
- 1 tsp ground turmeric
- ¼ cup fresh cilantro leaves
Instructions
- In a large bowl, whisk together the white vinegar, EVOO, sugar, Kosher salt, cracked pepper, and turmeric.
- Mix in the cauliflower pieces until every piece is evenly coated.
- Cover and chill in fridge for a minimum of 2 hours or overnight.
- Garnish with cilantro leaves. Enjoy!
