Ingredients
- Crust:
- ½ lb unsalted butter
- ½ cup granulated sugar
- 2 cups all purpose flour
- 1 tsp vanilla extract
- ½ tsp salt
- Filling:
- 6 large eggs
- 3 cups granulated sugar
- 3 tbsp grated lemon zest
- 1 cup freshly squeezed lemon juice
- 1 cup all purpose flour
- powdered sugar for dusting
Instructions
- Preheat oven to 350 degrees F.
- Using a stand up mixer with a paddle attachment, cream the butter, sugar and vanilla.
- In a separate bowl combine flour and salt.
- Add flour mixture to wet ingredients gradually with mixer on low until well combined and dough forms a ball.
- Press dough into a greased 9 x 13 x 2 inch baking pan.
- Bake for 15 minutes and remove from oven and let stand for about ten minutes.
- In a separate bowl, whisk together ingredients for the lemon filling until well combined.
- Pour over the crust and bake at same temperature for 30 minutes.
- Allow to cool completely before cutting into squares and dusting with powdered sugar.
