My Israeli salad is a simple, healthy and delicious side dish or meal on its own. This recipe is versatile in that you can add feta cheese, fresh mint, scallions or whatever ingredients you desire. Enjoy with fresh pita and humus.

Ingredients
- 1 large English cucumber cut into tiny cube-shaped pieces
- 2 large vine ripened tomatoes cut into tiny cube-shaped pieces
- Juice of 2 large lemons
- 1 tbsp olive oil
- ¼ cup chopped fresh parsley
- 1 tsp Kosher salt
- 1 tsp ground pepper
- 4 hard-boiled eggs
Instructions
- In a medium bowl, combine cucumber, tomatoes, lemon juice, olive oil, parsley salt and pepper.
- Toss gently.
- Serve in bowls and top each bowl with a hard-boiled egg. Serve with fresh pita and humus.
