This Israeli Avocado Salad can we served as a salad or even a dip. The hard cooked eggs make the avocado even creamier and add a whole new luxurious dimension. This velvety salad goes very well with pita chips or matzah or can even stand alone! Enjoy!

Ingredients
- 3 avocados, ripe
- 2 hard cooked eggs, peeled
- juice of 1 lemon
- 1 tsp salt
- ¼ tsp cumin
- 1 tbsp parsley plus extra for garnish, chopped
Instructions
- Scoop the contents of the three avocados, eggs, lemon juice, salt, cumin, and parsley into a medium bowl.
- Mash contents with a fork until a paste forms.
- Transfer into a smaller bowl and garnish with parsley.
- Serve with pita chips or matzah! Enjoy!
