- 3 eggs
- 1 cup honey
- 1 cup sugar
- 2 tsp. baking powder
- 1 cup warm coffee
- ½ cup oil (or applesauce)
- 2¾ cups flour
- 2 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 cup chopped apples or raisins (optional)
Instructions
- Combine all ingredients in bowl with mixer.
- Pour into greased mini bundt pan.
- Bake for 1 hour at 325 degrees or until golden brown.
