High Protein Asian Peanut Stir Fry

Ingredients
- 2 tbsp olive oil
- 2 boneless skinless chicken breasts cut into small chunks
- 1 14 oz block of extra firm tofu drained and chopped into cubes
- 1 red bell pepper chopped
- 1 cup broccoli chopped
- ½ cup snow peas
- ½ cup baby carrots
- ¼ cup sliced green onions
- 1 tsp fresh ginger grated
- ½ cup fresh bean sprouts
- ¼ cup peanut butter
- ¼ cup rice wine vinegar
- 1 tsp toasted sesame oil
- 1 tbsp honey
- 1 tsp sriracha (optional)
- black sesame seeds and sliced green onions for garnish
Instructions
- In a bowl, whisk together peanut butter, rice wine vinegar, sesame oil, honey and sriracha. Set aside.
- In a wok, heat olive oil.
- Add chicken chunks and cook about six minutes until chicken is fully cooked (not pink) and slightly brown.
- Add tofu and cook for two minutes with chicken, stirring constantly to make sure pieces don’t stick to pan.
- Add bell pepper, broccoli, snow peas, carrots, green onions, and ginger.
- Cook for two minutes to heat veggies.
- Add bean sprouts. Pour peanut sauce over contents of wok and gently combine with tongs. Remove wok from heat.
- Serve immediately with brown rice.
- Garnish with black sesame seeds and green onions.
