Ingredients
- 1 purple onion chopped finely
- 1 tbsp olive oil
- 2 carrots peeled and sliced
- 1 zucchini chopped into chunks
- ½ cup broccoli florets
- 1 green bell pepper chopped
- ½ cup frozen peas
- ½ cup cherry tomatoes
- ½ cup cooked lentils
- ½ cup butternut squash cut into small cubes
- 5 cups vegetable broth
- 2 tbs tomato paste
- 2 tsp onion powder
- 1 tsp kosher salt
- 1 tsp pepper
Instructions
- In a large soup pot, sauté onion and olive oil for about three minutes on medium heat until onions are translucent.
- Add all vegetables, broth, tomato paste, and spices.
- Cover pot and bring to a boil.
- Allow to simmer on low heat for about 30 minutes.
- Serve immediately or make in advance.
