This Hearty Fall Meatloaf is the perfect easy weeknight dinner. This is not your grandmother’s old fashioned meatloaf. Each slice is packed with vegetables, hard cooked egg, and tangy barbecue sauce. Although I prefer to use a combination of ground beef and turkey, you can use all ground beef or turkey, or even ground chicken. Enjoy!

Ingredients
- Meatloaf:
- 1 lb ground beef
- 1 lb ground turkey
- 2 eggs
- ⅓ cup panko bread crumbs
- 1 tbsp worcestershire sauce
- 2 carrots, shredded
- 2 green onions, thinly sliced (both green and white parts)
- ⅔ cup frozen spinach, thawed and drained
- ¼ cup frozen peas, thawed
- 3 tbsp flat leaf parsley, coarsely chopped
- 2 garlic gloves, minced
- 3 hard cooked eggs, shells removed
- Salt and pepper to taste
- Barbecue Sauce:
- ⅔ cup ketchup
- ¼ cup brown sugar
- ¼ cup apple cider vinegar
- 2 tbsp soy sauce, low sodium
Instructions
- Preheat oven to 400 degrees F.
- In a large bowl, combine beef, turkey, eggs, panko, worcestershire sauce, carrot, green onions, spinach, peas, 2 tbsp parsley, garlic, and salt and pepper. Mix ingredients together until evenly combined.
- Press half of the mixture into a greased loaf pan. Place all three hard cooked eggs into the loaf pan in a line, leaving about an inch or two between each egg.
- Add the rest of the meat mixture on top of the eggs and gently press into the loaf pan so that the meat is tightly packed.
- In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and soy sauce until evenly combined.
- Pour the sauce on top of the meatloaf.
- Bake for 45 minutes.
- Garnish with remaining 1 tbsp parsley.

I made this recipee, but left out hardboiled eggs and only used hamburger (I do not like ground turkey). Turned out absolutely wonderful !!!
