Ginger Root Tea with Lemon and Mint

Ingredients
- ⅓ cup ginger, peeled and cut into 1" cubes
- ½ cup fresh mint leaves
- 1 lemon, sliced into rounds
- 4 cups water
- Optional: honey to sweeten
Instructions
- In a large pot, boil water with the ginger cubes for approximately 30 minutes. You will know it's done because the water will turn slightly brown and will taste pleasantly spicy.
- Prepare two mugs, each with half of the mint leaves and one or two lemon rounds.
- Pour ginger water over the lemon and mint. The hot water will release the oils from the lemon peel and mint leaves. Let stand for 3 minutes.
- Add honey if desired.
- Enjoy!
