These Garlicky Sautéed Organic Greens are the perfect compliment to almost any meal. If you’re anything like me, I tend to get tired of eating greens as a salad. You can use almost any organic greens in this recipe, although, I recommend using Tuscan Kale, Baby Spinach, and Swiss Chard. The lemon zest and golden raisins bring out a touch of sweetness and the toasted pine nuts compliment the nutty flavor of the greens beautifully. This healthy side dish will taste like a sinful treat. Enjoy!
Garlicky Sautéed Organic Greens

Ingredients
- 8 cups organic greens chopped into large pieces
- 3 tbsp EVOO
- 4 cloves of garlic thinly sliced
- ½ cup golden raisins
- Zest from one lemon
- ¼ cup toasted pine nuts
- Salt to taste
Instructions
- In a large sauté pan, sauté garlic slices in 2 tbsp EVOO on medium-high heat for about two minutes until they just begin to slightly toast. Remove garlic with a spoon and place in a large bowl. (Note: Do not wait until the garlic has completely browned, as the garlic becomes bitter if it is over cooked.)
- Sauté raisins in the same pan for about a minute until they plump. Remove raisins and add to the bowl with the sautéed garlic.
- Add remaining tablespoon of EVOO and sauté the greens for about five minutes until they wilt. Add salt to taste.
- Toss greens in the large bowl with garlic, raisins, and lemon zest. Garnish with toasted pine nuts.
