Crockpot Chicken Vegetable Coconut Curry

Ingredients
- 1.5 lb chicken breast cut into small cubes
- 1 medium yellow onion diced
- 1 red bell pepper diced
- 1 small eggplant diced
- 2 garlic cloves minced
- 1 cup cherry tomatoes
- 1 cup string beans cut in half
- 2 14 oz cans coconut cream
- ½ cup water
- 2 chicken boullion cubes
- 3 tbsp tomato paste
- 1 tbsp honey
- 3 tbsp curry (choose your favorite blend)
- 1 tbsp turmeric
- Salt and pepper to taste
- 6 lime wedges for garnish
Instructions
- Combine all ingredients in a large crock pot and set on lowest setting (approximately 10 hours). Serve with rice.
