There are few dishes that are more delicious than cheese bourekas. This classic Middle Eastern delicacy is light yet rich and can be served as an appetizer or a main course. This recipe is no-fail and perfect for a big crowd or just a quiet meal for two.

Ingredients
- 1 package frozen puff pastry (2 sheets) defrosted in fridge overnight
- 1 cup ricotta cheese
- 1 cup grated jack cheese
- 2 eggs
- ½ tsp salt
- ½ tsp pepper
- 1 tbsp water
- sesame seeds
- poppy seeds
Instructions
- Preheat oven to 400 degrees F.
- Using a rolling pin, roll out one sheet of puff pastry on a lightly floured surface until about ¼ inch thick.
- Use a pizza cutter to cut the puff pastry sheet into 9 even squares.
- In a separate bowl, combine both kind of cheese, 1 egg, salt and pepper.
- Dollop one tbsp of cheese mixture onto each square of puff pastry.
- Be careful not to overfill each boureka.
- Then, wet the edges of each square with water and fold in half into squares or triangles according to personal preference.
- Use a fork to press the edges of pastry closed.
- Place bourekas on parchment-lined baking sheet.
- In a small bowl, whisk together 1 egg and 1 tbsp of water for eggwash and lightly brush each boureka with egg mixture.
- Sprinkle each boureka with sesame seeds or poppy seeds as desired.
- Repeat sequence with second sheet of puff pastry.
- Bake for about 10-12 minutes or until pastry has risen and is slightly browned on top. Serve warm.
