Cinnamon Bread Pudding with Raisins and Dates

Ingredients
- 1 large raisin challah, chopped into 1" cubes
- 6 eggs
- 2 cups vanilla soy milk, sweetened
- ½ cup sugar
- 1 tsp vanilla extracts
- 8 dates, pits removed and chopped
- 1.5 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- ½ stick unsalted butter or margarine, cut into ¼" cubes
Instructions
- Preheat oven to 375 degrees F.
- Assemble challah cubes inside of a buttered 9x13 baking dish.
- In a large bowl, whisk together eggs, vanilla soy milk, sugar, dates, cinnamon, nutmeg, and salt.
- Pour the egg mixture over the challah cubes, evenly coating every piece.
- Bake for 45 minutes or until golden brown.
- Serve warm and with ice cream or whipped cream. Enjoy!
