Enjoy a sweet Israeli version of a non-bake Passover cake. The chocolate matzo roll needs to be chilled before it can be sliced, and it will have the combination of a smooth chocolate and crunchiness of matzo.

Ingredients
- 4 matzot unsalted
- 8 oz. margarine (2 sticks)
- 6 oz. semi-sweet chocolate
- 3 tablespoons strong brewed black coffee
- ¼ cup sugar
- 1 tablespoon Kahlua or Brandy (optional)
Instructions
- Moisten the matzot under running water, then crumble into a medium bowl.
- Melt the sugar, coffee and chocolate in the top of a double boiler.
- Remove from heat and add liquor (if desired).
- Beat the margarine until fluffy and add the melted chocolate gradually, beating well after each addition.
- Stir in the crumbled matzot and mix with a spoon.
- Pour the mixture lengthwise on a piece of waxed paper.
- Fold paper around mixture and shape like a salami.
- Roll on table under your palms to give a smooth, round appearance.
- Secure edges of paper.
- Refrigerate roll for 6 hours.
- When hard enough to cut and peel off paper, slide crosswise and serve.
