Chocolate Chip Coconut Oatmeal Cookies

Ingredients
- 1 cup unsalted butter at room temperature
- 2 eggs
- 2 cups all purpose flour
- 1 cup rolled oats
- 1½ cups brown sugar
- ½ cup white sugar
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 tbsp vanilla extract
- 1 tsp salt
- 1 cup chocolate chips (dark or milk)
- 1 cup sweetened shredded coconut
Instructions
- Preheat oven to 350 degrees F.
- In a stand mixer combine all ingredients except for chocolate chips and coconut on low speed. Once the batter begins to come together, add the chocolate chips and coconut. Mix for about 30 seconds.
- Line baking sheets with parchment paper. With a cookie scoop, scoop balls of the cookie dough leaving at least two inches between each cookie, as they will expand in the oven.
- Bake for approximately 10 minutes or until golden brown. Let cookies cool on a cooling rack.
