Cheesy Jalapeno Cornbread

Ingredients
- 1 ¼ cups all purpose flour
- ¾ cup corn meal
- ¼ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup buttermilk
- ¼ cup vegetable oil
- 1 can creamed corn
- 1 egg
- ¾ cup grated cheddar cheese
- 2 jalapeno peppers sliced in rounds
Instructions
- Preheat oven to 400 degrees F.
- Grease a 9-inch pan.
- Whisk together dry ingredients in a large bowl.
- Gradually add wet ingredients, whisking gently until well combined.
- Mixture should look clumpy. Fold ½ cup of grated cheese into mixture with a spatula.
- Pour mixture into prepared baking pan.
- Sprinkle remaining cheese and jalapeno slices over the top of mixture.
- Bake for about 20 minutes or until edges turn golden brown.
