Banana Walnut Crumble Muffins

Ingredients
- 1 cup sugar
- ½ cup butter, unsalted and softened
- 2 eggs
- 1 tbsp vanilla
- 2 cups all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 large bananas, mashed
- 1 tsp lemon zest
- ⅔ cup sour cream
- ½ cup walnuts or pecans
- For the crumble:
- ½ cup brown sugar
- 3 tbsp all purpose flour
- 2 tbsp butter, unsalted and softened
Instructions
- Preheat oven to 350 degrees F.
- In a stand mixer set to medium speed, cream sugar, butter, eggs, and vanilla.
- Add the flour, baking soda, and salt.
- Once evenly combined, add bananas, lemon zest, sour cream, and walnuts.
- Line muffin tin with 12 muffin cups.
- Fill each cup with batter (approximately ¼ cup).
- In a small bowl, combine brown sugar and flour. Add the softened butter and mix with your hands until the mixture turns into small pea sized pieces.
- Sprinkle each muffin with about 2 tsp of crumble.
- Bake for 35 minutes.
- Cool and serve. Enjoy!
