Baked Salmon With Mango Salsa

Ingredients
- 2lb salmon filets
- ⅓ cup olive oil
- ⅓ cup soy sauce
- 2 large mangoes diced into ¼ inch pieces
- ¼ medium red onion finely chopped
- ½ large red bell pepper finely chopped
- 1 jalapeño finely chopped (you can use more or less depending on personal taste)
- juice of 3 limes
- Salt to taste
Instructions
- Set oven to 375 degrees F.
- Marinate salmon filets with olive oil and soy sauce in a zip lock bag for a minimum of thirty minutes (up to 24 hours).
- When ready, bake salmon on a baking sheet for approximately 18 minutes and then cover with foil and let them rest.
- In a medium bowl, combine mango, red onion, bell pepper, jalapeño, lime, and salt.
- Serve salmon with mango salsa on top. Garnish with extra jalapeño. Enjoy.
