Asian Inspired Quinoa Salad

Serves: 6-8 Servings
Ingredients
- Salad:
- 2 cups cooked quinoa
- 2 carrots finely shredded
- ¼ cup sugar snap peas sliced in halves
- ¼ cup shelled edamame
- ¼ cup whole roasted cashews
- ¼ cup dried cranberries
- Black sesame seeds for garnishing
- Dressing:
- ½ cup teriyaki sauce
- 2 tbsp creamy peanut butter
- 1 tbsp fresh grated ginger
- 1 tsp fresh minced garlic
- 1 tbsp toasted sesame oil
- 1 tbsp honey
Instructions
- In a large bowl, combine all salad ingredients. Set aside.
- In a small bowl, whisk together all dressing ingredients until mixture is smooth and creamy.
- Pour dressing over salad and mix thoroughly to ensure all ingredients are coated in dressing. Cover salad with plastic wrap and chill for at least one hour before serving.
- Garnish with black sesame seeds.
