Ingredients
- 3 lb chicken, cut into eighths
- ½ cup apricot jam
- ½ cup mayonnaise
- ½ cup white vinegar
- 1 package of onion soup mix
- ½ tsp pepper
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, whisk together apricot jam, mayonnaise, vinegar, onion soup mix and pepper.
- Rinse chicken and place in a glass baking dish.
- Pour marinade evenly over the chicken and bake for one hour and fifteen minutes or until chicken falls off the bone.

It’s an Israeli couscous and grain medley from Trader Joes. I made it with caramelized onions, kosher broth and dried cranberries. It’s delish!
