My Homemade Vegan Veggie Burgers are a hearty and healthy dinner solution for any crowd. Each patty is filled with protein and fiber and will keep you full for hours.
Homemade Vegan Veggie Burgers

Ingredients
- 1 tbsp. olive oil
- ½ cup chopped purple onion
- 2 cloves minced garlic
- ½ cup butternut squash in cubes
- 1 cup broccoli
- ½ cup shredded carrots
- 1 cup mushrooms
- 1 cup drained and rinsed kidney beans
- 1 cup drained and rinsed black beans
- ¼ cup fresh cilantro
- 1 cup cooked brown rice
- 2 cups uncooked rolled oats
- 1 tsp kosher salt
- 1 tsp pepper
Instructions
- Spray a large baking pan with non-stick cooking spray. Set aside.
- In a sauté pan, cook onions and garlic in olive oil on medium heat for 3 minutes until translucent.
- Add butternut squash cubes and continue cooking for 5 minutes or until cubes become slightly tender.
- Add broccoli, carrots, and mushrooms. Cook for about 3 more minutes.
- Remove from heat and allow to cool for 10 minutes.
- Pour contents from pan into a large bowl and mix with remaining ingredients.
- Then, place a third of the mixture into a food processor and process until mixture is a thick paste.
- Put processed mixture in another large bowl and repeat the processing with the remaining mixture in two more parts.
- Once all of the ingredients have been processed, use a measuring cup to make patties that are ⅔ cup each.
- Form them with your hands and flatten to ¾ inch thickness.
- Place patties on prepared pan.
- Once all patties are shaped and placed on pan, cover with plastic wrap and chill for 1 hour.
- Spray a grill pan with nonstick spray and grill patties for 3 minutes of each side.
- Serve on your preferred bun and dress up your burger with your favorite condiments.
