My Irresistible Pesto Pastries are soft and buttery treats oozing with delicious pesto and bursting with tangy sundried tomatoes and goat cheese. These are a wonderful substitute to bread and they can even serve as a delicious appetizer. While they look fancy, they are surprisingly easy to make.

Ingredients
- 1 package (2 sheets) puff pastry defrosted in refrigerator overnight
- ½ cup pesto sauce
- ½ cup sundried tomatoes drained and chopped
- ½ cup crumbed goat cheese
- 1 egg yolk whisked with one tbsp. water
Instructions
- Preheat oven to 400 degrees F and cover two baking sheets with parchment paper.
- Lay one cold sheet of puff pastry on a floured surface.
- Spread half of the pesto sauce evenly over the puff pastry covering entire surface.
- Sprinkle half of the sundried tomatoes and goat cheese over the pesto as evenly as possible.
- Carefully begin rolling the puff pastry tightly from the long end until you are left with one long roll. Using a sharp knife, gently slice 1-inch rounds and carefully lay them flat on prepared baking sheets about 1-inch apart.
- Repeat with second sheet of puff pastry.
- Brush each spiral with egg wash and bake for about 10-12 minutes or until dough puffs up and turns golden brown.
- Allow to cool for about 2 minutes and serve immediately.
