Ingredients
- 1 tbsp olive oil
- ¼ cup chopped yellow onion
- ¼ cup chopped leeks
- ¼ cup white cooking wine
- 2 cups frozen peas
- 3 cups vegetable broth
- ¼ cup heavy cream
- 2 tbsp chopped fresh mint
- 1 tsp kosher salt
- 1 tsp ground pepper
- sour cream (garnish)
- fresh parsley (garnish)
Instructions
- In a medium sized pot, sauté onion and leeks with olive oil on medium heat until translucent, about 4 minutes.
- Add wine and continue cooking until liquid evaporates for another 4-5 minutes, stirring constantly.
- Add frozen peas and broth and continue to cook on medium.
- Bring to a boil and reduce heat to low.
- Use a hand immersion blender to puree the soup directly in the pot as it cooks.
- Puree as much or as little as preferred.
- Add cream, mint, salt and pepper.
- Stir well and continue to cook for about 3 more minutes.
- Serve and garnish with a dollop of sour cream and fresh parsley.
